Fluffy Japanese Pancake , isn't that sound interesting and tempting.  When I first came across this recipe, I was so tempted that I tried it on the same day. Well , though the ingredients are very common and doesn't take too much time to cook, its the method that you need to practice . They look very adorable and resemble a lot with English Muffins but taste wise it is much sweeter and spongy. For toppings, you can use traditional maple syrup or fresh fruits with a dash of vanilla ice cream or maybe just cream. The best part of this dish is that you can eat it any time during the day, it will be great for breakfast, perfect for brunch and snack and even make a sweet yummy dessert after dinner. 

 I am happy to share this recipe on the eve of Valentine's day, so that you can enjoy this fluffy pancakes with your loved one.

 Ingredients for the pancake :


  • All purpose flour/pancake mix - 1 cup
  • Egg yolks - 2
  • Sugar - 1/4 Cup
  • Milk - 1/4 Cup
  • Vanilla Essence - 1/2 tsp
  • Baking powder - 1 3/4 tsp

Method :

  • In a medium bowl,mix together eggs,milk and vanilla until foamy
  • In another bowl mix the dry ingredients. Combine the both.dry and wet mixtures together.
  • Allow it to rest for 10 mints.
  • On medium flame allow the pan to heat,brush little oil or butter,then place pancake rings and pour 4 tbs of batter inside the ring. Cover the lid of the pan and allow to cook for 15 mints,or till you see the bubbles.
  • Open the lid and carefully flip the ring,allow the other side to cook for another 15 mints.
  • Let the pancake cool for sometime,then slowly take the ring out.
  • Pour some maple sauce or fresh cream with fruits.
