Fruits are the best source of vitamins and minerals.Nutrients in fruit are vital for our body.They are an absolute feast to our sight,not only because of their flavor and color but also for their unique nutrition-profile that help human body free from diseases and keep it healthy.

If fruits have benefiting properties which is essential for our body then complex carbohydrates are also a  good source of energy, which help us to remain active throughout the day.People often get confused between complex carbs with simple carbs. Complex carbs support our energy level and is essential for a healthy life whereas Simple Carbs are a source of empty calories.Vegetables,fruits and Pulses are a good source of healthy Carbohydrates and one can have plenty of them,without thinking of calories.Refined grain products and sugary junk foods are something which we should try an avoid as they are the simple carbohydrates,which help us to gain weight.

So,I tried to combine both Vitamins and Carbs in this salad,which not only increase its benefits but also enhance its taste. Make it for Breakfast or for brunch,it will surely give your metabolism a kick start. 

Recipe Of Fresh Fruit Salad In Potato Pancake

Ingredients For The Pancake:

  • 1 Potato,grated ( prefer sweet potato).
  • 1 Onion,grated
  • 1 Egg
  • Pinch Of Salt
  • Pinch Of Pepper
  • 1 Tbs Of Yogurt or Fresh Cream   

Recipe Of Fresh Fruit Salad In Potato Pancake

Method For The Pancake:


  • Mix all the ingredients in a bowl. Take a pan and add two tbs oil.
  • Once heated drop two or three 1/4 cup mounds,and flatten to make 1/2 inch thick pancakes.

For The Fruit Salad :

  • Take any three or five seasonal fruits of your choice,cut them into small pieces and toss them with 1 tbs of lemon juice,1tbs of ginger juice,few drops of honey and a pinch of salt.
  • Serve it with the Potato Pancake.
