Kolkata Style Fish Fry

 Recipe Of Fish Fry :

• Fish fillet - 5 to 10 pcs
• Ginger paste - 2 tbs
• Garlic paste - 2 1/2 tbs
• Lemon juice or Vinegar - 1 tbs
• Green chilli paste - 1/2 tbs (optional)
• Coriander paste - 1/2 tbs
• Salt to taste
• Bread crumbs - 3 to 4 tbs
• Eggs - 2 large
• Oil for frying. 

Kolkata Style Fish Fry

 Method :

• Clean the fish fillet and keep them on a plate.
• Meanwhile mix all the ingredients apart from bread crumbs, in a bowl.
• Take the fillet and deep them into the mixture and keep aside. Let the fish marinade for 15 mints.
• Now in a bowl whisk the eggs,deep the marinated fish fillets into the the eggs and then cover them with bread crumbs. Once done put the fish fillets into the refrigerator for 30 mints.
• Later for frying add oil in a pan and heat on a medium flame, Start frying the fillets on low to medium flame until golden brown.
• Taste best when served hot with ketchup and green salad.

Recipe Of Basanti Pulao

Ingredients :

• Rice 1 cup
• Water 2 cup
• Sugar 1 tblsp
• Grated ginger 1 tblsp
• Turmeric 1/2 tsp 
• Small Cardamoms 4 - 5
• Cashew nuts and raisins  1/2 cup
• Cumin Powder 2 tblsp
• 2 Bay leaves
• Ghee / Refined oil 3 tblsp
• Pinch of salt.

 

Recipe Of Basanti Pulao

Method :

• Drain the excess water after washing the rice throughly. Mix salt,turmeric,grated ginger and cumin powder with the rice and leave it for 30 mints.
• Meanwhile add 4 - 5 cups of water and bring to boil,add the cardamoms and bay leaves in the water.
• In a pan add 3 tblsp ghee and  add the rice,stir continuously till the rice changes it color,this is the time when you should also add the cashew nuts and raisins. Stir the rice for 3 - 4 mints.
• Once the water is ready add the spice coated rice and stir, cook till the rice is done.
• Serve hot and enjoy with your favorite curry.

Recipe Of Bottle Lau Chingri

Ingredients :

• 2 Medium Bottle Gourds
• 20 Pieces Of  Shrimp
• Salt to taste
• 1 Tbs Turmeric
• 1 Tbs Cumin Seeds
• 1 Whole dry red chilli
• 2 Bay leaves
• 1 Tbs Red chilli powder
• 1 Tbs Cumin powder 
• 1 Tbs Coriander powder

Recipe Of Bottle Gourd With Shrimp

Method :

• Peel and cut the gourd (lau) in very small pieces,salt them and keep it aside.
• Wash the shrimp throughly and rub salt and turmeric,keep it separately.
• Heat oil in a pan and add bay leaves and dry red chilli,then add the cumin seeds,let it splutter.
• Add the shrimp and stir for couple of minutes,then add the gourd pieces and cover the pan and cook on a low flame.
• Occasionally take the cover off and stir,check the gourd,if it is a fresh and young gourd,it will release enough water to cook the dish,and if it is a dry gourd,you might need some water to add.
• Add salt, turmeric,red chiili powder,cumin powder and coriander powder,stir well and cover for another couple of minutes.
• When the gourd is fully cooked and the gravy gets its consistency,switch off the flame and ladle it down. Serve with steam rice.
