Recipe Of Bottle Lau Chingri

Ingredients :

• 2 Medium Bottle Gourds
• 20 Pieces Of  Shrimp
• Salt to taste
• 1 Tbs Turmeric
• 1 Tbs Cumin Seeds
• 1 Whole dry red chilli
• 2 Bay leaves
• 1 Tbs Red chilli powder
• 1 Tbs Cumin powder 
• 1 Tbs Coriander powder

Recipe Of Bottle Gourd With Shrimp

Method :

• Peel and cut the gourd (lau) in very small pieces,salt them and keep it aside.
• Wash the shrimp throughly and rub salt and turmeric,keep it separately.
• Heat oil in a pan and add bay leaves and dry red chilli,then add the cumin seeds,let it splutter.
• Add the shrimp and stir for couple of minutes,then add the gourd pieces and cover the pan and cook on a low flame.
• Occasionally take the cover off and stir,check the gourd,if it is a fresh and young gourd,it will release enough water to cook the dish,and if it is a dry gourd,you might need some water to add.
• Add salt, turmeric,red chiili powder,cumin powder and coriander powder,stir well and cover for another couple of minutes.
• When the gourd is fully cooked and the gravy gets its consistency,switch off the flame and ladle it down. Serve with steam rice.

 Method For The Chicken :

• Marinate the Chicken Pieces with Vinegar, Green Chilli Paste and Ginger Garlic Paste for one hour.
• Then mix the other ingredients like Mustard Paste,Kaju and Peanut paste,Salt and Black Pepper and marinate for another 30 mints.
• Once done with marination put the chicken Pisces into the Oven and Grill for 30 to 35 mints.
• When the chicken is ready keep it in a separate bowl.

 Method For The Rice :

• Wash and soak the rice for an hour then boil the rice.
• In a pan add some oil and saute the vegetables in ginger garlic paste and chopped onions then add the preboiled rice and mix well.
•  Add the cheese and stir the rice for 5 mints.
• Once done then start platting the dish.

For Platting :

• Oil the Red and Yellow Bell Peppers and roast them.
• Cut the Bell Peppers into cubes and put them in between the Chicken.

• Chicken 
• Coriander paste
• Ginger Garlic Paste 3 Tbs
•  1 Large Onion Paste
• Green Chillies 4-5
• Red Chili Powder 1 Tbs
• Charcoal Pieces 3-4 
• Salt and Black Pepper as per taste

Recipe Of Smoked Dhania Chicken Method

• In a pan heat 2Tbs Oil and add the ginger garlic paste along with the onion paste. Stir till the raw smell of the paste disappear. 
• Add the Chicken Pieces and stir well. Add the coriander paste and the green chili paste.Stir for another 5 mints then add some water and salt.
• Cover the led of the Pan and let the chicken blend with the masalas.
• Meanwhile heat the charcoal Pieces till it evoke enough smoke for the aroma.
• Once the chicken is ready ladle it in a plate or a bowl and then take the charcoal pieces in a aluminium sheet and place it beside the Chicken in the same bowl.
• Now cover the bowl for at least 20 mints.
• After 20 mints when you remove the led you can smell the earthy aroma of the charcoals coming from the dish.   
• Enjoy the smoked chicken with any Indian Bread.

• I always prefer to semi boil the chicken before frying as it makes the chicken very soft and tender but one can always fry without boiling too.
• Serve with Ketchup or Green Chutney.

• Minutely cut the Veggies first and keep it aside then cut the  bread from the middle in two halves.
• Now start filing the bread with the veggies first then add the Tomato Ketchup followed by Chilli sauce and Mustard Sauce.
• Slice the boiled eggs and mix it with the Mayonnaise. Fill the bread with eggs and Mayonnaise.
• Sprinkle Salt and Black Pepper according to your taste.

 Ingredients:

• Milk 2 Cup
• Maida 4cup
• 1/2 Tbs Vanilla essence
• 2 Eggs
• Sugar or Honey according to your taste

• Take a shallow bowl and 2cup of flour.
• Add the eggs and beat well.
• Thereafter add the Vanilla Essence and Milk.
• Beat the mixture well and add the sugar or honey.
• Lastly add the cream.
• Once the mixture is ready keep it aside.
• Take a pan put some oil.
• Now take a spoon and spread the mixture in the pan.
• Fry both the side equally.

Ingredients:   

•     500 gms of chicken keema            
•   3 large onions ( paste)
•   1 tbs cumin powder
•   1 tbs coriander powder 

•   4 Tbls ginger garlic paste 
•    1/2 tbs red chilli powder 
•      1/2 tbs black pepper
•   little turmuric powder 
•     salt and sugar according to your taste 
•     1 tbs flour
•   Baking powder 
•    Breadcrumb
•     Oil to fry

   

How to make:

·         Add  the onions and ginger garlic paste to the keema along with the pepper and pinch of salt and sugar.

·         Add some baking powder and flour,then make a dough of the keema by mixing all these ingredients.

·         with your hand make round balls out of the keema.

·         In a shallow pan add some water and bring it to boil.

·         Add the balls to the boiling water and let balls be in  the water for 2 to 3 mints.

.      Then take out the balls from the water and roll over the breadcrumbs.

.          Deep fry the balls and keep it aside.

For the gravy

·         Add oil in a pan and once heated add the other half of the onion paste.

·         When onions start getting brown then add the ginger garlic paste along with the tomato paste

·         Stir for 3 mints then add the red chilli powder with salt and sugar.

·         After string for another couple of mints add the fried ball.

·         Mix the balls well with the masala.

·         Add the chicken stock.

·         Bring it to boil for at least for 5 mints.

·         Put the meat ball curry in a wide bowl.
