Nawab Wajid Ali Shah was responsible for creating such delicious dish called Biriyani in Kolkata. It is believed that  Nawab after loosing his empire reduced the meat quotient in Biriyani and the Biriyani that emerged in Nawabs new home was less rich in oil and ghee. To make up for the meatlessness the chefs started adding potaoes and the result was the unique Biriyani that all Kolkatans swear by.

There are number of decade old restaurants in Kolkata selling Biriyani. Shiraz in Park Street is said to serve the most poetic Biriyanis in the city.
