When the world is busy enjoying smoothies,shakes and other summer coolers, I am running after spices and herbs to learn the method and techniques of Iranian recipes. I did missed my summer recipes this season, but no regrets as I thoroughly enjoyed my journey with Persian Cuisine.  I realized that my journey with Persian Cuisine will be incomplete if I don't present a dish with Saffron,as it is one of the most used spice in Iran.  Among various Persian spices and herbs Saffron is considered as a staple spice of Iran.Saffron is derived from a flower called Crocus and is hugely grown in Iranian regions. This spice is mainly used for its flavor and rich color,it also has a very sweet aroma.

Saffron Chicken is again a very common Persian dish which they serve in almost every important occasions. All you have to do is to marinate the chicken with some curd,onion and saffron for sometime and then just saute it in olive oil or any other vegetable oil.


Recipe Of Saffron Chicken

 Ingredients:

  • Boneless Chicken Breast
  • 1 Large onion grated
  • 2 tbs Olive Oil
  • 2 tbs Lemon Juice
  • 2 tbs Yogurt 
  • 1/2 tbs Saffron dissolved in 3 tbs warm water
  • Salt and Pepper to taste.

Recipe Of Saffron Chicken

 Method :

  • Combine all the ingredients in a bowl and marinate for 2 hours in a refrigerator to blend flavors.
  • In a pan add 4 tbs oil and ladle the marinated chicken,saute with salt and pepper for couple of minutes.Add 1/2 cup of water if required and cover the pan with a lid for 15 mints on medium flame.
  • Remove the lid and stir well,switch off the flame once you get the desired consistency in the gravy.
  • Serve with any Indian Bread.
