On the last full moon day of the Lunar month,Holi is celebrated in India with enthusiasm and gaiety.There is symbolic legends explaining why Holi is celebrated as a color fest.But ,the most popular story associated with Holi is of King Hiranyakashipu and his evil sister Holika,in fact the word Holi derived from "Holika",who tried to kill Prahlada (a true devotee of Lord Vishnu) through treachery. Therefore Holi celebration starts with a Holika bonfire on the night before Holi.
Holi festival is celebrated with various names and people of different states follow different traditions,but what makes Holi so unique and special is the spirit of it which remains the same throughout the country and even across the globe.
A refreshing and healthful drink call Thandai is embedded with the tradition of Holi. A glass of thandai served in the midst of the play of colors when people get exhausted offers instant energy and set the mood for playing with colors. Thandai is a colling drink usually made of purified water,sugar,seeds od watermelon,almonds lotus steam seeds, cashew nut, saffron and the very intoxicating Bhang.
This Holi I am all set to prepare a different version of thandai with mint and basil leaves,which makes it more refreshing especially for summer.

Recipe For Thandai :
- Milk 1 ltr
- Cashew Nut 25 gms
- Peanut 25 gms
- Pistachio 20 gms
- Mint Leaves 10 to 15
- Basil Leaves ( tulsi ) 15
- Sugar 2 tbsp
- Cardamom Powder 1/4 tbsp
- Peppercorns 10
Method For Thandai :
- Soak all the ingredients in water for 30 mints,while start boiling the milk.
- Make separate paste of Mint leaves with Basil leaves and Cashew Nut with all the other ingredients.
- Stir the milk continuously while boiling , add cardamom powder,sugar and the cashew nut paste followed by the mint paste,stir well so that all the flavors get absorbed.
- Allow to cool the milk and then strain the milk. Refrigerate the milk for an hour.
- Serve Chilled.
